Easy Red Sauce

2 cans crushed or diced tomatoes 1 can tomato sauce 1 small can tomato paste 3 Tbsp dried basil 1 Tbsp dried oregano 1 tpsp dried onion 2 tpsp garlic powder 2 tpsp salt 2 Tbsp virgin olive oil Open all cans of tomatoes & put into sauce pot over low heat Combine all dried ingredients and olive oil  stirring well and increasing the heat to medium high Keep stirring the sauce until you see small bubbles breaking through the top  Reduce heat to low & let simmer for at least 30 minutes.  Feel free to let it simmer for as long as you want, but be sure to keep stirring Serves 4 Serve over pasta with meatballs & sausage, top with Parmesan cheese

Easy baked fried chicken

2 Boneless skinless chicken breasts 1/4 cup panco breadcrumbs 1/4 cup Parmesan cheese 1 Tbsp garlic powder 3 Tbsp olive oil Preheat oven to 425° F Line a cooking sheet with aluminum foil Mix the panco, Parmesan, & garlic powder & spread out on a small plate Cover chicken breasts in the olive oil  Lay oiled breast in the breading mixture, making sure to cover all sides of the meat with the breading  Put breaded breasts on the cooking sheet & place in oven  Cook for 30 minutes  Serves 2
