Easy Taco Shells

1 pack corn tortillas
Spray oil (optional)


  • Preheat oven to 415°F & place oven rack at the top of the oven 
  • Take a small stack of 4-6 tortillas & place on microwave safe plate 
  • Cover with a damp towel & microwave on high for 15 seconds (or until tortillas are soft)
  • Pull out the oven rack, spray each tortilla with oil if you wish, & drape over the rack so they are hanging down 
  • Bake for 10-15 minutes or until crispy 
Serves as many as you need (just buy enough tortillas)

Fill with whatever you want

Grilled Sirloin

2 sirloin steaks 1 Tbsp fresh cracked black pepper 1 Tbsp garlic salt 1 Tbsp virgin olive oil Rub both sides of steaks with garlic salt, pepper, & olive oil. Let sit for at least 30 minutes (up to 3 hours)  Start charcoal & wait till hot with small flames (add wood chips as wanted for added flavor)  Grill steaks 6 minutes a side for medium rare  Rest 10 minutes then serve (try with Grilled Corn on the Cob )  Serves 2

Guinness Beef Stew

1 pint can of Guinness 1lb stew meat 2 carrots 4 stocks celery 1/2 lb small potatoes 1/2 cup mushrooms 2 cups water 1 Tbsp virgin olive oil 1 Tbsp butter 1 Tbsp rosemary 1 Tbsp thyme 1 Tbsp black pepper 1 Tbsp salt 1/2 Tbsp granulated garlic 1/2 cup worshitsur Cover stew meat with 1/2 the salt and pepper, put in ziplock & add worshitsur. Seal bag & mix well, set aside till cooking  Put pot over medium high heat with olive oil & butter, melt butter  Sear the outside of the beef in the pot, remove from pot, & put aside  Add 1 cup water to the pot & deglaze  Add Guinness, stir well until it's at a low simmer. Whole Roasted Lemon Thyme Chicken

1 whole chicken (4-5 lbs) 1 lemon 4 cloves fresh garlic 1 Tbsp garlic salt 4 sprigs of fresh thyme 1 Tbsp dried thyme Preheat oven to 350°F Remove chicken from packaging, discard innards and neck, making sure the chest cavity is empty  Crack the garlic cloves with a large knife making sure to crack every clove, put in chest cavity  Rub the fresh thyme sprigs in your hands quickly, just until you can smell it, then pack in chicken  Slice lemon in half Juice half of the lemon into the chest cavity, then put the rest into the chicken  Juice the other half of the lemon over the outside of the chicken being sure to rub it all over. Put the rest of the lemon in the chicken (Pro-tip: cut the lemon into quarters if it won't all fit. Easy Red Potato Soup

2 lbs red potatoes 4 cups chicken stock (or water for vegan) 1 Tbsp minced fresh garlic 1/2 Tbsp thyme 1/2 Tbsp salt Chop up the potatoes keeping the skins on & small  Put in pot with stock, bring to a boil  Cover and reduce heat to low  Cook at least 30 minutes or until the skins are coming off the potatoes  Add salt & mash potatoes in the pot, stirring frequently until all the large potato parts are gone  Add thyme & stir over low heat until desired consistency  Serves 4

4 boneless skinless chicken breasts 1 packet taco seasoning (choose your own spice level) 1 Tbsp olive oil 1 cup water Cut chicken breasts in half & put in Crockpot  Cover both sides of chicken pieces with taco seasoning & oil Spread the chicken out evenly in the Crockpot, then add water  Cover & cook on high for 3 hours  Shred chicken in the Crockpot & mix  Cover & cook at least 30 minutes or up to 1 hour Serve with your choice of tortillas (or Easy Taco Shells ) & toppings Serves 4
